Maintaining Critical Food Service During Major Renovation
Customer Need
Syracuse VA Medical Center was preparing for an extensive renovation affecting its primary kitchen and food-service facilities. The existing kitchen plays a critical role in supporting approximately 160 resident patients, as well as healthcare staff, visitors, and outpatient programs each day.
The facility needed a temporary kitchen capable of maintaining uninterrupted food production throughout the year-long construction project while meeting the operational, sanitation, and safety requirements of a healthcare environment. The temporary solution also needed to integrate with the hospital’s existing loading dock and remain dependable through Syracuse’s varied seasonal conditions.
Solution
Mobile Kitchens Canada supplied and commissioned a fully equipped 44' mobile kitchen trailer to serve as the medical center’s primary food production facility throughout the renovation.
The temporary kitchen provided commercial cooking and food preparation equipment, including ovens, fryers, a tilt skillet, refrigeration, and cold storage. To create an efficient connection with the hospital, the trailer was positioned on a custom elevated platform aligned with the existing loading dock. A reinforced walkway provided staff with safe, direct access between the temporary kitchen and the medical center.
Mobile Kitchens Canada coordinated delivery, installation, utility connections, commissioning, staff orientation, and ongoing technical support. The weather-resistant facility operated through the heat, rain, snow, and winter conditions experienced during the year-long deployment.
The Result
The temporary mobile kitchen enabled Syracuse VA Medical Center to complete a major, multi-floor renovation while maintaining continuous food production for patients, healthcare staff, and visitors.
The elevated installation created a practical connection to existing hospital operations, allowing meals and supplies to move efficiently between the mobile kitchen and the facility. Throughout approximately 12 months of operation, the kitchen delivered reliable performance in changing weather conditions and helped the medical center preserve an essential patient-support service without interruption.
